Detox-Friendly Beet & Carrot Soup

Why it fits the detox plan:
Beets support methylation and bile flow, aiding toxin clearance.
Carrots contain pectin to bind toxins in the gut.
Warm, cooked vegetables are easier to digest during gut healing.

Ingredients
2 medium beets, peeled and diced
3 carrots, peeled and chopped
1 small onion, chopped
2 cups homemade GAPS meat stock
1 Tbsp fresh ginger, grated
2 Tbsp coconut cream (optional)
Sea salt to taste
Method
Place beets, carrots, onion, and ginger in a pot with meat stock.
Bring to a boil, then simmer until vegetables are tender (20–25 minutes).
Blend until smooth. Stir in coconut cream if using.
Serve warm, garnished with fresh parsley.
