Beef Soup Recipe

1.5 kilos of beef (meat on bone) shank / short ribs / necks
2.5 litres of filtered water
1 small bunch of shallots / 1 small brown onion
2 tablespoons of ghee
Optional - chilli flakes, ginger, garlic, rosemary
Vegetables - pumpkin, carrot, parsnip, beans, silverbeet


Add onion/shallots with ghee into large pot, sautee until soft.
Add beef and water and bring to the boil.
Add other spices if desired.
Once at a boil turn to a low simmer for 120-180 minutes or until the meat is falling off the bone
Take beef out and put vegetables (cut into pieces) into stock and cook until soft.
Add the meat back in and serve.
