Ingredients:
1 onion
Meaty beef bones, such as a combination of shanks, ribs, knuckle bones, and marrow bones
Vegetables, such as carrots, peas, turnips, leeks
Filtered water (About 1 litre per 1.25 kilos of meaty bone)
1-2 Tablespoon of peppercorns
Mineral salt to taste, such as Celtic sea salt
Instructions:
Place beef bones in a dutch oven.
Add chopped onion, mineral salt to taste, and peppercorns (I like to add the peppercorns in a metal tea strainer).
Add filtered water to cover.
Cook on a low simmer for 3 hours.
Add chopped vegetables of your choice.
Cook for 1 more hour on a low simmer.
What we are looking for is the meat to be falling off the bone and then vegetables to be soft.
Serve meat, bone marrow, vegetables, and meat stock together in bowls with some probiotic food.
