Meat-less pizza!!


Do you ever get to the point where you just want a meal or two without a meat involved

I was playing around in the kitchen last night and found that there is always a new an exciting ways of looking at recipes that we have been using for a long time.

This particular creation worked out really well and went down a treat with the family that I had over for dinner (yes they were all asking for the recipe!).

What your will need:

To make the pizza base use this recipe.

Tomato paste

Shallots

Roasted pumpkin

Roasted zucchini

Roasted capsicum

Mushrooms (cut into quarters)

I have found it best to precook the base until there is a crisp brown layer on the top then take it out of the oven and add your toppings.

If you load on the toppings then it might go a little soggy in the middle so either choose to put less on or less of your paste.

Put back in the oven until you are happy with how it looks and then take if out and enjoy!
