Anzac Slice


Is anyone looking for a gluten free, grain free variation of Anzac bikkies for Anzac Day? This is a recipe I made up a couple of years ago - I call it 'Anzac biscuit-ish' slice - so yummy with a cuppa! Here it is if you'd like to try it - it's also egg free, with the option of dairy free! :)

Ingredients:

170g blanched almond meal 50-70g coconut sugar or honey, to taste 100g macadamia or cashew pieces 70g desiccated coconut 1/8 tsp fine sea salt 1/2 tsp bicarb soda 140g melted butter or 120g coconut oil

Method:

(mix in a Thermomix at times/speeds below, or in a food processor or by hand): - Mix dry ingredients 10 sec/speed 3. - Add melted butter/coconut oil and mix 15 sec/rev/speed 4. - Tip into large rectangular dish (lined) and press in firmly to fill dish evenly. - Bake approx 15 mins at 170C, or until lightly browned. - Cool before serving. Store in fridge to keep firm and chewy.

Note: If you want to mill raw almonds you can, but it will result in a coarser texture than blanched almond meal, and may crumble a little bit. Still good though!
