Cherry Ripe Slice


It is that time of the year when stone fruit are coming back into season. It is a time of year that I look forward to, not only do these fruits taste very, very tasty but they also offer some other benefits.

Cherries are fantastic for helping to move our lymphatic system which is great for moving the congestion out of our body from the colder months. They are also really good for helping to clear uric acid out of our body so has been useful in the treatment of gout in the past.

Ingredients:

Base:

100 grams almond meal

85 grams maple syrup

100 grams shredded coconut

55 grams coconut oil

4 tablespoons of chia seeds

4 tablespoons of cacao

1 tablespoons of vanilla essence

1 pinch of salt

Cherry layer:

2 cups of desiccated coconut

3 tablespoons of coconut oil

3 table spoons of maple syrup

1 teaspoon of vanilla essence

2/3 cup of pitted cherries

2/3 cup frozen raspberries

Directions:

Place all the base ingredients into a high-speed blender and blend until combined. You may have to scrape down the edges so to incorporate all of the ingredients.

Press down with the back of a spoon into a 20x20 tray.

Place into the freezer while making the next layer

Blend the berries and cherries together. You can leave them a bit chunky as then you get flavor chunks through the end.

Add in the rest of the ingredients and blend on a low speed until combined.

Press out onto the base layer with the back of a spoon and place in the freezer.

Optional:

Make you own chocolate or melt a premade on.

Drizzle over the top of the slice.

Cut and serve.
