Hot cross buns


If this time of year with all of your friends eating hot cross buns bring up a little bit of envy for you, things are about to get a bit better for you. Did you know that you can make most things with variations of recipes?!

How exciting!! It just means that you have the adjust the way that you think about what ingredients are being used in the recipes that you make.

These buns are made from spelt flour for those who are wheat intollerant

  • 220g whole meal spelt flour

  • 1 tsp cinnamon

  • 1tsp dried yeast

  • ½ cup milk

  • 1 tbs cinnamon

  • 1tsp vanilla bean

  • ¼ cup rice bran oil

  • 1 free range egg lightly beaten

  • 80g rasins

  • 50g currents

Mix the flour, yeast, oats, cinnamon and a pinch of salt in a mixing bowl Warm the milk and honey then pour into the bowl with the egg and oil Mix the dough for about 6 mins until smooth and elastic Cover the bowl with a clean cloth or glad wrap and leave to double in size in a warm place – for 1 hour Kneed the dough into 10 little rolls Cover with a tea towel and allow to rise for 30mins to double in size Bake for 20mins – until golden at 160 degrees. Cool and then make a cross from melted dark (85%) chocolate

Gluten Free Hot Cross Buns –

These are also a great option if you are on a weight loss program. They have a lot of protein and only a little honey to sweeten.

  • 300g almond meal

  • pinch of sea salt

  • ½ tsp of macadamia nut oil

  • 2 tablespoons of honey

  • zest from 1 orange

  • ½ tsp vanilla bean

  • 2 organic eggs

  • pinch of cinnamon

  • 80g raisins or sultana or currents

  • 50g dark chocolate melted.

Preheat the oven to 160 degrees Combine all ingredients and mix well Spoon out 14 small portions onto a baking tray Bake for 20 minutes Cool and then pipe a cross from more melted dark chocolate.
