Winter pumpkin cake

6 eggs
2 cups of grated (and then tightly packed) pumpkin (the spaghetti squash works really well)
1/2 cup of honey
1/3 cup of ghee (or duck fat, butter)
3 cups of almond meal
3 medium sized apples


Grease baking dish and cover the bottom with apples (that have been cored and cut into slices)
Blend the rest of the ingredients and the pour the mixture onto the apples.
Smooth the top and then bake at 150-170 degrees for 40-50 minutes
