Stock station

Having young kids can bring its own challenges with food, I've found that giving some ownership over what goes into what they eat goes a long way. This recipe allows for you (and your kids) to get in your bowl exactly what you want!


Ingredients:
250 mls of meat stock
Choice of vegetables to add in:
- zucchini, grated
- carrot, grated
- onion, chopped
- pumpkin, grated or thinly sliced
- bok choy, thinly sliced
- broccoli, cut into small florets
- leftover cooked veggies (beetroot, cauliflower)
2 Tbsp ghee or duck fat
Some leftover cooked chicken (optional)
1-2 eggs per person (optional)
Pate
Cooked bacon
Salt and pepper to taste
 
Method:
Place 1 cup of meat stock into a saucepan and bring to simmer. This is where the fun starts as you can choose to add you own selection of above ingredients to the stock (making sure there’s enough broth to cover vegetables), with fat, and simmer for 5 mins or until cooked.

Add leftover cooked chicken, simmer until warm, then crack in eggs. Cover with a lid and simmer gently until eggs are soft cooked.

Season to taste.
