Grain Free Pancakes


We all have those times when we can't be bothered cooking and yet we still want something that is tasty that doesn't require all that much input. It certainly is handy to have some recipes up your sleeve for when these times hit.

Ingredients

  • Half a boiled/steamed sweet potato; OR roughly half a cup of butternut pumpkin.

  • 3-4 pastured eggs

  • 1 heaping tablespoon of nut butter.

Directions:
  • Blend and spoon 50 cent piece size dollops into medium heat coconut oil. They cook quickly!

  • Top with your favorite toppings some of which might be ghee, a nut butter of your choice, or spices (cinnamon, nutmeg, cardamom etc), and a dash of maple syrup.

This serves one adult and two kiddos, but the recipe is very forgiving, so don’t worry too much about the precision of the measurements.
